Sooooo KP was not having the oatmeal I made this morning. She just decided today that she “doesn’t eat” oatmeal. SO I had two options go back in the kitchen or let her be hungry. I STRONGLY considered letting her be hungry, but that’s frowned upon…don’t judge me (…ok you can judge. Just do it quietly).
Because I had already cooked once, I put together a super simple Breakfast scramble and she loved it!
What You’ll Need
1 cup hashbrowns (these are garlic herb for extra flavor)
1/2 cup mild cheddar (because who doesn’t like cheese)
and seasoning of your choice.
I used Garlic Powder and Tony Chachere’s…I eyeballed the amounts because measuring seasoning is a sin. (Trust me I went to Catholic school.)
Step 1. mixed the eggs and a portion of you seasoning in a bowl. (you can use a fork or a whisk… I used a fork because who actually whisks anything?!)
Step 2. Pour mixture into a warm oiled skillet and stir gently.
Step 3. As eggs begin to cook add cheese and hasbrowns and the rest of your seasonings. (season everything! Even babies don’t deserve bland food.)
ANNNNd that’s it!
I added a bit more cheesy hashbrowns to the top because the kid loves them. And most importantly…she actually ate it this time.
